  1. Vegetable Chili.
  2. 2 tbsp olive oil, extra virgin.
  3. 1 cup red onion, chopped.
  4. 5 clove garlic.
  5. 1/4 tsp chili powder.
  6. 2 tsp ground cumin.
  7. 1 can diced tomato.
  8. 1 can (15 ounce) no salt-added black beans.
  9. 1 cup water.
  10. 1 cup bell pepper, chopped (any color).
  11. 1 cup zucchini, chopped.
  12. 1 cup corn kernels.
  13. 1 cup white mushrooms, chopped.
  14. 1 cup cilantro, chopped.
  15. 1/4 tsp cayenne pepper.
  16. 1 salt & fresh ground pepper to taste.

Step by step how to cook Summer Vegetarian Chili:

  1. Heat oil in medium pot. Add onion, garlic, chili powder and cumin. Saute over medium heat until onion is soft, about 5 minutes. Add remaining ingredients (except garnishes) and stir.
