Ingredients for Summer Vegetarian Chili:
- Vegetable Chili.
- 2 tbsp olive oil, extra virgin.
- 1 cup red onion, chopped.
- 5 clove garlic.
- 1/4 tsp chili powder.
- 2 tsp ground cumin.
- 1 can diced tomato.
- 1 can (15 ounce) no salt-added black beans.
- 1 cup water.
- 1 cup bell pepper, chopped (any color).
- 1 cup zucchini, chopped.
- 1 cup corn kernels.
- 1 cup white mushrooms, chopped.
- 1 cup cilantro, chopped.
- 1/4 tsp cayenne pepper.
- 1 salt & fresh ground pepper to taste.
Step by step how to cook Summer Vegetarian Chili:
- Heat oil in medium pot. Add onion, garlic, chili powder and cumin. Saute over medium heat until onion is soft, about 5 minutes. Add remaining ingredients (except garnishes) and stir. Bring to a boil, then lower heat and simmer 20 minutes or until vegetables are soft. Add more liquid if needed..
