Ingredients for Protein-packed Frittata:

  1. 8 eggs.
  2. 4 oz chopped center-cut bacon.
  3. 6 oz sliced hot Italian sausage.
  4. 1 jalapeño.
  5. 1/4 cup coarse-chopped yellow onion.
  6. 1/2 cup coarse-chopped broccoli florets.
  7. 2 cups sweet-blend spinach.
  8. 1 cup coarse-chopped baby bella mushrooms.
  9. 1/4 cup coarse-grated parmigiano reggiano.
  10. 2 tablespoons chopped green onions.
  11. 2 tablespoons butter.
  12. 2 tablespoons chopped scalions.
  13. 1 cup part-skim shredded mozzarella.

Step by step how to cook Protein-packed Frittata:

  1. Chop and slice bacon and sausage.
  2. Heat skillet on medium and add meat (I usually keep them on separate sides).
  3. While meat is cooking chop all vegetables.
  4. Cook meat until slightly brown and place on a paper towel.
  5. Drain all fat from pan and add a tablespoon of butter.
  6. Preheat oven to 320F (I prefer convection bake setting).
  7. Cook all vegetables in skillet (except the scallions) until spinach is wilted and broccoli is slightly tender and turn heat off.
  8. In separate non-stick skillet melt a tablespoon of butter on low to coat the pan.
  9. Crack all eggs and stir (I usually add some salt and pepper to taste) until eggs are slightly forming.
  10. Stir in all vegetables.
  11. Stir in sausage and bacon.
  12. Stir in parmigiano reggiano.
  13. Top the mixture with mozzarella.
  14. Sprinkle scallions on top of mozzarella.
  15. Place pan in middle of oven and cook for 15 minutes or until the egg is set.
  16. Turn up the oven to broil (or 500F) and finish for a couple of minutes until cheese is slightly brown.
  17. Remove from oven and let sit for 3-5 minutes.
