Ingredients for Frozen Pistachio Yogurt Fruit Cups:

  1. Pistachio Crust.
  2. 2 cup pistachio nuts, shelled and ground up finely.
  3. 2 tbsp sugar.
  4. 3 tbsp melted butter.
  5. Yogurt Mixture.
  6. 1 -6 oz container lemon greek yogurt.
  7. 1 -6 oz container lime greek yogurt.
  8. 1/2 cup blueberries.
  9. 1/2 cup diced strawberries.
  10. 1/2 cup raspberries.
  11. 1/4 tsp poppy seeds.
  12. 1/2 tsp lime zest.
  13. 1 juice of 1 small lime.

Step by step how to cook Frozen Pistachio Yogurt Fruit Cups:

  1. Preheat oven to 350°. Fill 2 regular sized muffin pans with parchment paper muffin cups (can get these in the baking aisle in the grocery store..awesome!) or use regular cupcake liners..
  2. Mix ground pistachios, sugar and melted butter. Fill bottom of muffin cups and pat down lightly to form a crust..
  3. Bake crust by itself at 350° for 10 minutes. Remove from oven and allow to cool slightly..
  4. Mash the fruit of the yogurt ingredients in a medium bowl..
  5. Add yogurt to mashed fruit and mix well..
  6. Add lime zest, lime juice and poppy seeds to yogurt mixture..
  7. Layer the yogurt mixture into the muffin cups almost to the top of the muffin liner on top of the pistachio crust..
