Ingredients for Chimichurri Rice:

  1. 1 cup Basmati Rice.
  2. 2 cups vegetable broth or chicken broth.
  3. 1 cup yellow onions.
  4. 1 cup green peas.
  5. 1 cup capsicum [ red and yellow].
  6. 1 tbsp creme fraiche or plain sour creme.
  7. to taste salt.
  8. as needed oil.
  9. For Chimichurri Sauce:.
  10. 2 Red Capsicum.
  11. 2 tsp red chilli flakes.
  12. 2 tsp smoked paprika.
  13. 1 tbsp dried oregano.
  14. 6 garlic clovea.
  15. 2 tbsp spring onion greens.
  16. 1/2 cup coriander leaves.
  17. 1 tsp pepper powder.
  18. 2 tsp lemon juice.
  19. 1/4 cup red wine vinegar.
  20. As needed kosher salt.
  21. As needed olive oil.

Step by step how to cook Chimichurri Rice:

  1. Soak the basmati rice for an hour and cook it in vegetable broth or chicken broth..
  2. For the sauce : grind capsicum, red chilli flakes, paprika, garlic, pepper, lemon juice, salt, and red wine vinegar into a paste. Add in oregano, spring onion greens, and coriander leaves and grind into a smooth paste. Drizzle some oil, combine well and keep it aside..
  3. Add oil in a wok and saute onions, capsicum and green peas..
  4. When the vegetables get roasted enough add in the prepared chimichurri sauce and saute it for a couple of minutes..
  5. Add in creme frachie or plain sour creme and combine well.
  6. Now add the prepared rice and adjust salt..
  7. Chimichurri rice is ready..
