- 3/4 cup warm water (105-115 degrees).
- 1 1/2 tsp yeast.
- 2 tsp granulated sugar.
- 1 3/4 cups bread flour.
- 1 tsp salt.
- 2 tbsp olive oil.
- Caribbean Sauce:.
- 1/2 cup light brown sugar.
- 1/4 cup water.
- 1/4 cup ketchup.
- 1/4 cup light corn syrup.
- 1/4 cup minced white onion.
- 2 tbsp red wine vinegar.
- 1 tsp minced garlic.
- 1 tsp lemon juice.
- 1/2 tsp salt.
- 1/2 tsp crushed red pepper flakes.
- 1/4 tsp ground black pepper.
- 1/8 tsp dried thyme.
- 1/8 tsp ground allspice.
- Jerk Seasoning:.
- 2 tbsp light brown sugar.
- 1 1/2 tsp salt.
- 1/2 tsp ground black pepper.
- 1/2 tsp ground paprika.
- 1/2 tsp ground allspice.
- 1/4 tsp garlic powder.
- 1/4 tsp onion powder.
- 1/8 tsp ground cayenne pepper.

- 2 chicken breasts, pounded thin.
- olive oil cooking spray.
- 1 red bell pepper.
- 1 yellow bell pepper.
- 2 cups + 4 Tbsp mozzarella cheese (I use 4 cups).
- 1/2 cup cooked thick bacon, crumbled.
- 1/2 cup thinly sliced white onion.
- 2 tbsp chopped green onion- green part only.

- Pizza Dough:.
- Mix yeast and sugar and dissolve in warm water. Let sit for 5 minutes..
- Mix flour and salt in bowl..
- Once yeast mixture has set for 5 minutes, pour into flour mixture along with oil..
- Slowly mix in the flour until it forms a ball..
- Knead with hands on floured surface for 10 minutes..
- Coat dough with olive oil, cover, and sit in warm spot for 1-2 hours until doubled in size..
- Punch down dough, cover and store in refrigerator overnight..
