Ingredients for Smoky Veg Biryani:

  1. 2 cups Basmati rice.
  2. 1 cinnamon stick.
  3. 2 bay leaf.
  4. 1 star anise.
  5. 4 cardamom.
  6. 5 clove.
  7. 9-10 black pepper.
  8. 4 tbs oil.
  9. 1 tsp cumin seeds.
  10. as needed Cashew nuts.
  11. 5 onion.
  12. 4 tomatoes.
  13. 2 potatoes.
  14. 1 cauliflower.
  15. 2 capsicum.
  16. 2 carrot.
  17. 1 tsp Ginger chilli garlic paste.
  18. 2 tbsp Coriander leaves.
  19. 1/2 tsp Garam masala.
  20. 1 tsp Red chilli powder.
  21. 2 tbsp ghee.
  22. 2 tbsp curd.
  23. Coal.

Step by step how to cook Smoky Veg Biryani:

  1. Boil 2 cup rice with 8 cups of water, cinnamon, star anise, cloves, cardamom, black pepper, bay leaf, one tbs oil.
  2. Boil for hardly 2 mins strain excess wate.
  3. Fry cashew,sliced onions,cauliflower, potatoes keep it aside.
  4. For masala In the same pan remove excess oil add ghee add cumin seeds add half of fried onion, ginger garlic chilli paste,add finely chopped carrot capsicum, add chopped tomatoes, cook them till oil released.
  5. Add chilli powder,garam masala,cook well, add curd and cook of 2 mins add fried cashew, potatoes, and cauliflower then switch off the flame.
  6. In a pan spread a layer of masala then rice again masala again rice.
  7. Meanwhile heat up coal on direct fame till red take it in bowl, put the bowl over the last layer add ghee and pinch of asafoetida over the coal cover the pan immediately for 5 mins.
  8. After 5 mins sprinkle coriander and half of the fried onion and serve it with vegetable raita or kadhi.
