- 1/3 cup rice vinegar.
- 1 tsp sesame oil.
- 1 tsp sugar.
- Pinch salt.
- 1/4 tsp red pepper flakes.
- 1/2 lime.
- 1 chopped pepper (Thai chile).
- 2 shallots brunoise.
- 1 cucumber (your choice of cut).
- Smoked trout (1/2 fillet).
