Ingredients for Mix Veg Kadhai:

  1. 3/4 cauliflower head, medium florets.
  2. 3/4 cup green peas.
  3. 1/2 cup finely chopped carrots.
  4. 1/2 cup corn kernels.
  5. 1 medium size orange pepper.
  6. 1 large potato cut into cubes.
  7. 1 large onion thinly sliced.
  8. 1 large tomato roughly chopped.
  9. 4 garlic cloves finely chopped.
  10. 2 green chillies finely chopped.
  11. 1/3 cup cashews.
  12. 3-4 stalks coriander leaves chopped.
  13. 1 tbsp cumin.
  14. 1 cinnamon stick.
  15. 1-2 bay leaves.
  16. 1 tbsp turmeric powder.
  17. 1 tbsp red chilli powder.
  18. 1 tbsp garam masala.
  19. 1 tbsp kosher salt.
  20. 1 tbsp kasuri methi.
  21. 2 tbsp ghee/ oil.

Step by step how to cook Mix Veg Kadhai:

  1. In a large wok take 2 tbsp of ghee, once hot add cumin, cinnamon and bay leaf. Wait for cumin to crackle..
  2. Now add garlic, green chillies and onions. Saute till the onions become golden..
  3. Add tomatoes and let it cook till mushy. Add all the spices and mix well. Cook till the ghee separates..
  4. Add cashews, cook for another minute..
  5. Add all the vegetables and mix well. Cover for 3-5 minutes. Check if vegetables are half way cooked..
  6. Remove the lid, add 1 tbsp of kasuri methi and mix well. Cook for another 5-7 minutes on medium flame. Turn off the flame after it's cooked well..
  7. Garnish with coriander leaves and serve hot with rotis..
