Ingredients for Mix Veg Kadhai:
- 3/4 cauliflower head, medium florets.
- 3/4 cup green peas.
- 1/2 cup finely chopped carrots.
- 1/2 cup corn kernels.
- 1 medium size orange pepper.
- 1 large potato cut into cubes.
- 1 large onion thinly sliced.
- 1 large tomato roughly chopped.
- 4 garlic cloves finely chopped.
- 2 green chillies finely chopped.
- 1/3 cup cashews.
- 3-4 stalks coriander leaves chopped.
- 1 tbsp cumin.
- 1 cinnamon stick.
- 1-2 bay leaves.
- 1 tbsp turmeric powder.
- 1 tbsp red chilli powder.
- 1 tbsp garam masala.
- 1 tbsp kosher salt.
- 1 tbsp kasuri methi.
- 2 tbsp ghee/ oil.
Step by step how to cook Mix Veg Kadhai:
- In a large wok take 2 tbsp of ghee, once hot add cumin, cinnamon and bay leaf. Wait for cumin to crackle..
- Now add garlic, green chillies and onions. Saute till the onions become golden..
- Add tomatoes and let it cook till mushy. Add all the spices and mix well. Cook till the ghee separates..
- Add cashews, cook for another minute..
- Add all the vegetables and mix well. Cover for 3-5 minutes. Check if vegetables are half way cooked..
- Remove the lid, add 1 tbsp of kasuri methi and mix well. Cook for another 5-7 minutes on medium flame. Turn off the flame after it's cooked well..
- Garnish with coriander leaves and serve hot with rotis..
