Ingredients for Almost Cincinnati Chili:
- Noodles---------.
- 1 pound spaghetti noodles, I used Linguine.
- As needed salty water to boil noodles.
- 2 tablespoons extra Virgin olive oil.
- Chili------------.
- 1-1/4 pound ground chuck.
- 2-3 leaf Bay leaves.
- 1-1/2 cup water.
- 1 tablespoon Worcestershire sauce.
- 1 tablespoon apple cider vinegar.
- 1/2 teaspoon ground allspice.
- 1/2 teaspoon ground cinnamon.
- 1 teaspoon minced garlic heaping.
- 1 teaspoon salt more to taste.
- 1/4 teaspoon cayenne pepper powder.
- 12 ounce tomato paste.
- 1/4 teaspoon ground chili powder.
- Toppings.
- To taste diced onion.
- 2 cup shredded cheddar cheese.
- As needed Oyster crackers.
Step by step how to cook Almost Cincinnati Chili:
- Boil the noodles in salty water and 2 tablespoons of extra Virgin olive oil. When pasta is done drain saving 1 cup of pasta water, and set aside..
- Break the ground beef up into tiny bits. Add chili spices, garlic, beef, and bay leaf and add to water and boil..
- After you boil 15-20 minutes bring to a simmer add tomato paste and blend in..
- Simmer for about an hour. If to thick add a little of the pasta water to thin it out. If not discard the pasta water for it will no longer be needed.

- Add cheese and onions to the very top in whichever order you wish..
