Ingredients for Vickys Jerk Beef Stew GF DF EF SF NF:

  1. 1 tbsp oil.
  2. 1 tbsp cornflour / cornstarch.
  3. 750 grams diced stewing beef.
  4. 400 ml beef stock.
  5. 400 grams can of chopped tomatoes.
  6. 2 red bell peppers, diced.
  7. 2 yellow peppers, diced.
  8. 1 onion, chopped.
  9. 200 grams baby button mushrooms, quartered.
  10. 200 grams green beans cut into 2" pieces.
  11. 2 tbsp Jerk seasoning (or to taste).
  12. 1 tbsp garlic puree.
  13. to taste salt & ground black pepper.

Step by step how to cook Vickys Jerk Beef Stew GF DF EF SF NF:

  1. Preheat the oven to gas 3 / 160C / 325F.
  2. Heat the oil in a frying pan and lightly brown the diced beef.
  3. Drain the beef then transfer to a large casserole dish.
  4. Stir in the rest of the ingredients then put the lid on the dish and put in the oven for 2.5 - 3 hours.
  5. Stir again then season to taste. You may like to add more Jerk seasoning or some black pepper.
