Ingredients for Vickys Jerk Beef Stew GF DF EF SF NF:
- 1 tbsp oil.
- 1 tbsp cornflour / cornstarch.
- 750 grams diced stewing beef.
- 400 ml beef stock.
- 400 grams can of chopped tomatoes.
- 2 red bell peppers, diced.
- 2 yellow peppers, diced.
- 1 onion, chopped.
- 200 grams baby button mushrooms, quartered.
- 200 grams green beans cut into 2" pieces.
- 2 tbsp Jerk seasoning (or to taste).
- 1 tbsp garlic puree.
- to taste salt & ground black pepper.
Step by step how to cook Vickys Jerk Beef Stew GF DF EF SF NF:
- Preheat the oven to gas 3 / 160C / 325F.
- Heat the oil in a frying pan and lightly brown the diced beef.
- Drain the beef then transfer to a large casserole dish.
- Stir in the rest of the ingredients then put the lid on the dish and put in the oven for 2.5 - 3 hours.
- Stir again then season to taste. You may like to add more Jerk seasoning or some black pepper.
