Ingredients for Mike's Habanero Chili:
- 1.5 lbs Ground Beef.
- 1 tbs Olive Oil.
- 1 med Yellow Onion, diced.
- 5-6 cloves Garlic, minced.
- 1/2 large Green Bell Pepper, chopped.
- 2-3 large Carrots, peeled and chopped.
- 1-2 stalks Celery, chopped.
- 2 Habaneros, diced (reduce to 1 if you are sensitive to extreme heat).
- 1 (15 oz) can Tomato Sauce.
- 2 (14.5 oz) cans Fire Roasted Diced Tomatoes (juice included).
- 1 (14.5 oz) can Pinto Beans (not drained).
- 2 tbs Chili Powder.
- 1 tbs *Spiceologist Smokey Habanero Rub (www.spiceologist.com).
- 3 tsp Oregano (Mexican Oregano Preferred but not necessary).
- 3 tsp Cumin.
- 2 tsp Sea Salt (adjust to taste).
- 2 tsp Paprika.
- 2 tsp Garlic Powder.
- Bacon (crumbled for topping).
- Shredded Sharp Cheddar (for topping).
Step by step how to cook Mike's Habanero Chili:
- Add Olive Oil to skillet on medium heat. Add chopped Onion and Garlic and saute for 4-5 mins (until onions are translucent and the garlic starts to brown)..
- Add the Ground Beef and brown. Drain fat..
- In a Crock Pot, add all ingredients, including Ground Beef Mixture..
- Cook on LOW for 4-5 hours (*do not cook on high...it will burn on the bottom).
- Serve with Crumbled Bacon and Shredded Sharp Cheddar Cheese (optional) or over your favorite pasta..
