Ingredients for Basil Yellow Rice:

  1. Rice.
  2. 100 gr rice.
  3. 150 ml water.
  4. Seasonings.
  5. 7 cloves shallots.
  6. 5 cloves garlic.
  7. 2 chilli (if you like spicy, otherwise don’t use it).
  8. 2 tsp shrimp paste.
  9. 2 cm turmeric.
  10. 1 tsp vegetable oil.
  11. Salt.
  12. White pepper.
  13. 1 tsp chicken stock powder.
  14. 15 basil leaves.
  15. Garnish.
  16. 5 basil leaves.
  17. 2 slices fresh tomato.

Step by step how to cook Basil Yellow Rice:

  1. Cook the rice. Leave overnight in the fridge for the better texture..
  2. Mix shallots, garlic, chilli, shrimp paste and turmeric in food processor or pestle and mortar..
  3. Put oil in the pan over low medium heat. Add the mixture above into the plan. Stir for 5 minutes until it’s fragrant..
  4. Add rice. Mix well until the colour looks even. Add salt, pepper, chicken stock powder to taste. Add basil leaves. Mix altogether. Cook for another 5 minutes..
  5. Serve with basil leaves on top and sliced tomatoes. Enjoy while it’s hot!.
