Ingredients for Summer Couscous Salad:

  1. 1 1/4 cup water or Vegetable boullion low sodium.
  2. 3/4 cup Couscous.
  3. 1 can Black Beans rinsed well until water runs clear.
  4. 2 Roma tomatoes diced.
  5. 4-5 green onions diced including white.
  6. 1 small sweet onion Diced, mind were strong. I soaked them in sugar water. Not long enough lol I was hungry.
  7. 1/3 cup Crumbled feta cheese,.
  8. 1 green bell pepper, seeded and diced.

Step by step how to cook Summer Couscous Salad:

  1. Add water or boullion to saucepan, bring to a boil.
  2. Add Couscous, turn heat off cover with a tight lid..
  3. Walk away for 15-20 minutes. Allow Couscous to absorb liquid..
  4. While Couscous is sitting, prep veggies, rinse black beans very well, until cold water runs clear..
  5. Dice Veggies, onions, green onions, etc. add whatever you want to add. Your taste..
  6. Once Couscous is done, carefully add all ingredients together, mix well..
  7. Chill in Fridge an hour or two before eating..
