Ingredients for Hassan’s Salona:

  2. 2 Cups Chicken Stock or Broth.
  3. Hot water.
  4. 3 medium onions cut into 6ths.
  5. 6 cloves garlic minced or pressed.
  6. 3 marrow squash or 1 medium zucchini cut into large chunks.
  7. 2 cups large cauliflower florets.
  8. 5 small or 2 long skinny eggplants cut into large chunks.
  9. 12-15 okra/lady fingers trimmed.
  10. 20 whole pea pods.
  11. 2 Carrots cut in big chunks.
  12. 4 medium tomatoes cut into 6ths.
  13. 4 medium potatoes unpeeled cut into 6ths.
  14. 2 capsaicin any color cut into 6ths.
  15. 1 tbls Arab Spices.
  16. 2 tsp granulated garlic (powder can be used).
  17. 1 tsp chili powder.
  18. 2 tsp turmeric.
  19. 1 tsp cinnamon.
  20. 1 tbls dried coriander/cilantro.
  21. to taste Salt and pepper.
  22. 3 Black lemons.
  23. 1 bunch coriander/cilantro minced (optional).

Step by step how to cook Hassan’s Salona:

  1. Cut up all vegetables and place in a bowl. My husband like me big chunks for all of his vegetables but you can cut them how you prefer..
  2. Cut a medium onion in 6ths and mince or press 6 cloves of garlic..
  3. Mix all of the spices together and set aside..
  4. I’m a stock pot sauté the onions and garlic in olive oil. When they are soft add the tomatoes and cook for 3-5 minutes..
  5. Sauté the vegetables in a large skillet with olive oil until they are browned..
  6. Add the tomato paste to the stock pot along with the bowl of seasoning and stir. After about 2 minutes add 2 cups of chicken stock. I prefer Better Than Broth because is doesn’t have MSG. 2 tablespoons in 2 cups of hot water works perfect for this recipe..
  7. Toss in the black lemons. Stir then bring to a boil for about 5 minutes. Add the vegetables and cover with hot water. Stir and bring to a boil. I let it boil about 15 minutes the. Simmer until the carrots are soft. Enjoy!.
