Ingredients for Suran Koftas made in Appe Pan with Smoky Flavoured Makhani Gravy:

  1. for kofta.
  2. 100 gram Suran or Yam.
  3. 2 small boiled potatoes.
  4. 2 tablespoon besan(gram flour).
  5. 1 teaspoon ginger and green Chilli paste.
  6. Handful coriander leaves.
  7. 1 teaspoon coriander powder.
  8. 1/2 tsp garam Masala.
  9. 1/2 tsp amchur(dry mango) powder.
  10. to taste Salt.
  11. as needed oil for Koftas in Appe Pan.
  12. For gravy.
  13. 2 small sized onions roughly chopped.
  14. 4 tomatoes roughly chopped.
  15. 2 garlic cloves.
  16. 1 inch ginger.
  17. 2-3 green chillies.
  18. 1 teaspoon oil.
  19. 1 bay leaf.
  20. 1 cinnamon stick.
  21. 2 cloves.
  22. 1/2 tsp jeera(cumin) seeds.
  23. 1/2 tsp Haldi/Turmeric powder.
  24. 1 teaspoon Kashmiri red Chilli powder.
  25. 1 teaspoon coriander powder.
  26. 1 teaspoon garam Masala.
  27. to taste Salt.
  28. 1/2 tsp kasturi methi.
  29. 10 kaju (cashew)paste.
  30. Handful coriander leaves.
  31. 1 tablespoon ghee.
  32. For smoky flavour.
  33. 1 charcoal coyla.
  34. 1/2 tsp ghee.

Step by step how to cook Suran Koftas made in Appe Pan with Smoky Flavoured Makhani Gravy:

  1. For making Koftas.. Grate Suran or Yam. All all masalas with boiled potatoes and besan and mix well..
  2. Make small balls.. and place it on Appe Pan which we have to grease it with oil..
  3. Cook it on low flame.. and flip the side when it is golden brown. It will take some time..
  4. Till then..take one pan or kadhi whichever is convenient.. add one teaspoon oil.. put onions and saute till transculent. To it add ginger, garlic and green chillies..
  5. Now add tomatoes and cover for 5 mins till it gets soft. Add some water and cook for 10 15 minutes in slow flame. Let the mixture gets cool down..
  6. After this grind it in the mixer and strain it..
  7. Take same pan add ghee or butter or oil as per ur choice. Add whole garam Masala and pour the gravy.. cook it for some time..
  8. Now add cashew paste to it. Stir continuously. Cover and cook for 5 to 8 mins. Add water as per requirement if u feel gravy is thick..
  9. Heat the charcoal on gas until it turns red. lace it in on one katori pour half teaspoon ghee over it and cover immediately to get the smoky flavour. Keep it for 5 mins..
  10. Now gravy is ready to be served with Koftas. Serve it with hot Naans.
