Ingredients for Okra Stir Fry (Bhindi Ki Sabzi):

  1. 500 g bite sized chopped okra.
  2. 1 small onion chopped the same size as the okra.
  3. Salt as per taste.
  4. 1 teaspoon turmeric powder.
  5. 1/2 teaspoon asafoetida.
  6. 1 teaspoon red chilli powder.
  7. 1 tablespoon coriander powder.
  8. 1 tablespoon garam masala.
  9. 1 teaspoon cumin powder.
  10. 1 teaspoon amchur powder.
  11. 3 tablespoons cooking oil.

Step by step how to cook Okra Stir Fry (Bhindi Ki Sabzi):

  1. Heat the oil in a wok.
  2. When the oil is hot add the cut okra and a teaspoon of turmeric powder.
  3. Cook on high flame for 3-4 minutes till the outer surface of the okra becomes soft.
  4. When the okra becomes soft, reduce the flame to β€˜medium’ and add in the powder spices and the chopped onion.
  5. Cover and cook for about 2 minutes.
  6. Open the lid and give it a mix. Add salt as per your taste and cover and cook for about 3-4 minutes.
  7. Goes well with chappatis (Indian flat bread) or as a side dish with any regular lunch.
