- 4 medium size baingan (egg plant).
- 4-5 Onion finely chopped.
- 1 tbsp chopped garlic.
- 2 green chilli finely chopped.
- 1/2 inch ginger grated.
- 4-5 big tomato chopped in small dice.
- 4-5 tbsp oil.
- 1/2 tsp jeera / cumin.
- 1 tsp turmeric powder.
- 1 tbsp coriander powder.
- 1 tbsp chilli powder or as per taste.
- 1/2 tsp garam masala.
- as per taste Salt.
- as needed Green coriander finely chopped.
Step by step how to cook Baingan Ka Bharta (Smoky flavor egg plant bharta):
- First roast the eggplants on an open flame on a gas stove top and soak in water immediately so that their charred skin removes easily..
- Remove charred skin and mash the roasted eggplants..
- Now heat the oil in a pan add jeera when it splatter add garlic, onion, chilli, ginger stir well and cook till onion becomes golden brown..
- Then add turmeric powder, coriander powder, chilli powder, garam masala and salt as per taste, stir and cook for a while..
- Now add chopped tomatoes and cook until it becomes soft..
- When release the oil from them add mashed eggplants, stir and cook for 10-15 minutes on low medium flam..
