  5. 1/2 inch ginger grated.
  6. 4-5 big tomato chopped in small dice.
  7. 4-5 tbsp oil.
  8. 1/2 tsp jeera / cumin.
  9. 1 tsp turmeric powder.
  10. 1 tbsp coriander powder.
  11. 1 tbsp chilli powder or as per taste.
  12. 1/2 tsp garam masala.
  13. as per taste Salt.
  14. as needed Green coriander finely chopped.

  1. First roast the eggplants on an open flame on a gas stove top and soak in water immediately so that their charred skin removes easily..
