Ingredients for Smoky Paneer Masala:
- 250 grams paneer cube.
- 1 onion cube.
- 1 capsicum cube.
- 1 tsp ginger garlic paste.
- 1/2 tsp jeera.
- 1 tsp kasuri methi.
- 2 tbsp freash cream.
- 1 tbsp ghee.
- 2 tbsp fresh coriander.
- To taste Salt.
- Dry masala:-.
- 1/2 tsp coriander powder.
- 1/2 tsp Kashmiri red chilli.
- 1/4 tsp haldi / turmeric powder.
- 1/2 tsp jeera / cumin powder.
- 1/2 tsp garam masala.
- For paste:-.
- 1 medium size onion.
- 1 inch ginger.
- 6-8 garlic.
- 2 tomatoes.
- 6 cashew.
- 5 black pepper.
- 2 cloves.
- 2 dry red chillis.
- 2 green cardamom.
- 1 inch cinnamon.
- 1 tablespoon oil.
- For smoking:-.
- 1 metal bowl.
- 1 coal piece.
- As required ghee.
- 1 pinch hing / asafoetida.
Step by step how to cook Smoky Paneer Masala:
- Heat oil in a pan. Add black pepper, cloves, cardamom, cinnamon, ginger, garlic, red chilli..
- Add the onions and saute it till changing the colour. add cashews and tomatoes..
- Now off the flame, cool it and make fine paste..
- Heat ghee in a pan. Add add jeera, onions, capsicum and saute it. Now Ginger garlic paste. Now all dry masalas and paste and saute for a few seconds..
- Now add paneer and salt and half cup water. Stir it gently. Cook it on low flame. Add kasoori methi and fresh cream..
- Heat the coal on the flame. Place a Bowl in pan. Add a few drops of ghee on the coal, a pinch of Hing and close the lid. Let it rest for 5 minutes..
- Open the lid after 5 minut and remove the bowl. Stir it. Garnish with fresh coriander..
- Serve it hot with roti, paratha, naan or kulchas..
