Ingredients for Smoky Paneer Masala:

  1. 250 grams paneer cube.
  2. 1 onion cube.
  3. 1 capsicum cube.
  4. 1 tsp ginger garlic paste.
  5. 1/2 tsp jeera.
  6. 1 tsp kasuri methi.
  7. 2 tbsp freash cream.
  8. 1 tbsp ghee.
  9. 2 tbsp fresh coriander.
  10. To taste Salt.
  11. Dry masala:-.
  12. 1/2 tsp coriander powder.
  13. 1/2 tsp Kashmiri red chilli.
  14. 1/4 tsp haldi / turmeric powder.
  15. 1/2 tsp jeera / cumin powder.
  16. 1/2 tsp garam masala.
  17. For paste:-.
  18. 1 medium size onion.
  19. 1 inch ginger.
  20. 6-8 garlic.
  21. 2 tomatoes.
  22. 6 cashew.
  23. 5 black pepper.
  24. 2 cloves.
  25. 2 dry red chillis.
  26. 2 green cardamom.
  27. 1 inch cinnamon.
  28. 1 tablespoon oil.
  29. For smoking:-.
  30. 1 metal bowl.
  31. 1 coal piece.
  32. As required ghee.
  33. 1 pinch hing / asafoetida.

Step by step how to cook Smoky Paneer Masala:

  1. Heat oil in a pan. Add black pepper, cloves, cardamom, cinnamon, ginger, garlic, red chilli..
  2. Add the onions and saute it till changing the colour. add cashews and tomatoes..
  3. Now off the flame, cool it and make fine paste..
  4. Heat ghee in a pan. Add add jeera, onions, capsicum and saute it. Now Ginger garlic paste. Now all dry masalas and paste and saute for a few seconds..
  5. Now add paneer and salt and half cup water. Stir it gently. Cook it on low flame. Add kasoori methi and fresh cream..
  6. Heat the coal on the flame. Place a Bowl in pan. Add a few drops of ghee on the coal, a pinch of Hing and close the lid. Let it rest for 5 minutes..
  7. Open the lid after 5 minut and remove the bowl. Stir it. Garnish with fresh coriander..
  8. Serve it hot with roti, paratha, naan or kulchas..
