A quick and easy dinner that is ready in under 35 minutes! You either love bitter melon (khổ qua) or you hate it and nothing in between. Growing up Kim loved it and ate bitter melon soup (canh khổ qua) and stir fries routinely while I, on the other hand, despised it's bitterness so mom rarely made it. But over the years I've come to love it. This is one of my favorite soups, Bitter leaves can also be made with Ogbono, Okra or added to other soups. Here in this video I will be frying my Egusi.
This stuffed bitter melon soup is a delicious Vietnamese "soup", stuffed with pork, mushroom, and mung bean noodles, simmered until the melon softens in a light chicken broth.
As a kid, my parents couldn't get me to eat this stuff, but I've really grown to love this dish.

Ingredients for Melon seed soup with Bitter leaves:
- 1 Small Onion chopped.
- 1 1/2 cup Grinded Melon seeds.
- 3 tbsp Grinded Crayfish.
- 3 tbsp Grinded Chilli pepper.
- 1 can Dried stock fish.
- 2 cup Warm water.
- 2 piece Know or Maggi small cubes.
- 3 tbsp Palm Oil.
- 2 pinch Salt.
- 10 piece chicken legs.
- 1/4 cup Dried bitter Leaves.
Bitter melon is very easy to identify. It is pale or dark green, cucumber-like with a bumpy, grooved Two, cut them up, remove the spongy portion and seeds and rub with salt. Egusi soup is really not a soup at all, much more like a stew but it has superb flavor. I love trying new ingredients egusi seeds are delicous!
Step by step how to cook Melon seed soup with Bitter leaves:
- Pour 2 cups of water in pot to boil.
- Add uncooked chicken and chopped Onion, Allow boil for 7mins.
- ADD 1-2 pinches of salt, allow boil 3 Tablespoons of pepper.
- Now add 2 piece Know or Maggi small cubes and 3 tablespoons palm oil.
- Now add 1 1/2 grinded melon seeds Allow boil for 10mins and stir, then add 1/4 cup of dried bitter leaves or sprinkle a handful..
- Once cooked serve.
Tons of spinach or bitter leaves makes it a well rounded meal served with fufu or rice. A unique dish that will leave you wanting more. Bitter leaf soup, like most other Nigerian soups is named after the particular leaf which is used in preparing it. But of course, you need to wash this leaf to remove Half cup of ground Crayfish. Ogiri (a product of castor seeds)(optional).
