Ingredients for Desi Vegetarian Chili:

  1. 1/2 large onion - diced roughly.
  2. 2-3 tablespoon olive oil.
  3. 1 red bell pepper - diced.
  4. 1 green bell pepper - diced.
  5. 1 orange bell pepper - diced.
  6. 1 jalapeno pepper diced.
  7. 1 can black beans.
  8. 1 can pinto beans.
  9. 1 can sweet corn.
  10. 1 can diced tomatoes or pasta sauce or 2 tomatoes diced.
  11. 1 bayleaf.
  12. 1 cinammon stick.
  13. Bunch fresh basil leaves (optional).
  14. 1 tablespoon Cumin powder.
  15. 1 tablespoon Coriander powder.
  16. 1/2 tablespoon Garam masala powder.
  17. 1/2 tablespoon Red chilli powder - to taste.
  18. 1/2 tablespoon Kashmiri red chilli powder (optional).
  19. 1/2 tablespoon Turmeric powder.
  20. 1 teaspoon Garlic powder.
  21. to taste Salt.
  22. 1/2 tablespoon Black pepper.
  23. 1 lime squeezed or 2 tablespoon lime juice.

Step by step how to cook Desi Vegetarian Chili:

  1. Put oil in a Crock-Pot express pan and turn on saute mode. Add onions and saute till translucent. Then add bell peppers, cinammon stick and bay leaf and saute..
  2. Add all the canned beans and continue sauteing. Add all spices..
  3. Add tomatoes/tomato pasta sauce. Add 1 cup or half cup of water..
  4. Switch Crock-Pot express to beans/chilli mode and set for 20 minutes. After 20 minutes, quick release the steam (optional, can also let it naturally release)..
  5. Take out half cup to 1 cup of chilli from Crock-Pot, blend it and then pour it back into the chilli. Put lime juice in. Taste and see if anything is missing..
  6. Garnish with cheese and spring onions. Serve with dollop of sour cream, avocado and tortilla chips..
