Ingredients for BIG Farmer Style Brunch:

  1. 1 tbsp butter.
  2. 1 medium sweet onion - diced.
  3. 1 large green pepper - diced.
  4. 1 20 ounce bag seasoned hashbrowns / shredded potatoes - i use jimmy dean.
  5. 3/4 lb to 1 lb. smoked ham steak.
  6. 8 eggs.
  7. 1 cup milk.
  8. 1/2 tsp salt.
  9. 1/4 tsp pepper.
  10. 1/4 tsp garlic powder.
  11. 1 1/2 to 2 cups shredded cheese your choice - i use mexican blend.

Step by step how to cook BIG Farmer Style Brunch:

  1. Preheat oven to 350.
  2. Melt butter in a frying pan. Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned - your preference. Remove from heat..
  3. Dice ham steak - remove any fat & casing on edges..
  4. Grease a 13x9 casserole dish. Evenly press in seasoned potatoes..
  5. Evenly spread onions, green peppers & ham on top of potatoes..
  6. In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder..
  7. Pour on top of casserole..
  8. Sprinkle on 1 1/2 to 2 cups shredded cheese..
  9. Bake, uncovered, 40 - 50 mins - till eggs are set & top is golden brown..
  10. Remove from oven - let sit for 5 - 10 minutes before cutting & serving. Salt & pepper to taste if desired..
  11. This is a BIG breakfast - recipe can easily be cut in half. I usually make this on the weekends when I want to sleep in - breakfast & lunch served at once lol. Enjoy...psychobetty...XOXO..
