  1. 1 ham hock.
  2. 2 quart water.
  3. 1/4 cup butter.
  4. 1 1/2 cup fresh or frozen okra, chopped.

  7. 3 tbsp parsley flakes.
  8. 2 stalks celery, chopped.
  9. 6 cloves garlic, smashed, left whole.

  13. 1/2 tsp pepper, to taste.
  14. 1/2 tsp cayenne pepper, to taste.
  15. 1/2 tsp ground mace.

  17. 1/2 tsp ground allspice.
  18. 1 tsp gumbo file.
  19. 2 tsp Worcestershire sauce.
  20. 2 lb peeled, raw shrimp.
  21. 1 lb crab meat.
  22. 13 1/2 oz andouille sausage.
  23. 2 cup cooked rice.

  1. Place the ham hock and water in a stock pot and simmer for 1 hour. Remove the ham hock to cool, reserving the liquid..
  2. In a large skillet, heat the butter over medium heat..
