  1. 8 slices bacon cut into quarters.
  2. 8 oz mushrooms sliced.
  3. 1/2 medium onion diced.
  4. 8 eggs.
  5. 1 cup milk.
  6. 1/2 cup shredded cheddar.
  7. 1/2 cup shredded Pepper Jack.
  8. to taste Salt and pepper.

Step by step how to cook Bacon and Mushroom Frittata:

  1. Preheat the oven to 400 Degrees (F).
  2. In a 10 inch cast iron skillet, fry the bacon. Do NOT drain the grease.
  3. When the bacon is nearly done add the mushrooms and the onions and cook until the onions are translucent.
  4. Combine eggs, milk, salt, pepper, and shredded cheddar and pour into the bacon, mushroom and onions in the skillet..
  5. Place skillet uncovered into a 400 degree (F) oven and bake for 15 minutes or until the eggs have set. A toothpick placed in the center will come out clean..
  6. Remove from oven, sprinkle Pepper Jack over the top and bake for another 3 minutes or until the cheese on top has melted..
