Ingredients for Veg Burrito bowl:

  1. Layer 1: Veg Mexican rice.
  2. 1 cup basmati rice cooked.
  3. 1 cup yellow + green + red capsicum (bell pepper).
  4. 0.25 cup spring onion.
  5. 0.5 cup sweet corn.
  6. 4 broccoli florets.
  7. Garlic paste.
  8. 2 tbsp olive oil.
  9. 3 tbsp Tomato sauce.
  10. 2 tbsp red chilli sauce.
  11. 2 tbsp red chilli flakes.
  12. 1 tbsp soya sauce.
  13. 1 tbsp cilantro leaves.
  14. Salt.
  15. Layer 2: Rajma (kidney beans) gravy.
  16. 1 cup Rajma soaked overnight and boiled.
  17. 4 tbsp spring onion.
  18. 2 tbsp tomato.
  19. 1 tsp garlic paste.
  20. 2 tbsp tomato sauce.
  21. 2 tsp red chilli flakes.
  22. 1 tsp cream.
  23. Salt.
  24. 2 tbsp cilantro leaves.
  25. 1 tsp olive oil.
  26. Layer 3: Sour cream.
  27. 1 cup curd (thick).
  28. 2 tbsp lemon juice.
  29. 3 tbsp Crushed pepper.
  30. Salt.
  31. Layer 4: Salsa.
  32. 2 tomatoes chopped.
  33. 2 tbsp spring onion.
  34. 1 carrot grated.
  35. Salt.
  36. 0.25 tsp chat masala, Aamchur powder.
  37. 1 green chilli chopped.
  38. Layer 5: Nachos and toppings.
  39. Nachos or tortilla chips crushed.

Step by step how to cook Veg Burrito bowl:

  1. For Rajma: In a pan take olive oil + garlic paste + red chilli flakes and sauté for a minute. Add spring onion + tomato and sauté. Add cooked Rajma + tomato sauce+ salt and cook for 5 minutes. Add cilantro leaves and a tsp of cream and mix well.
  2. For Mexican veggie rice: In a pan take olive oil + garlic paste + red chilli flakes and sauté well. Now add spring onion + capsicum + sweet corn and sauté for 3 minutes. Add Chilli sauce + tomato sauce + soya sauce and basmati rice cooked and mix well with salt for 5 minutes. Ensure not to break the rice..
  3. For sour cream : in a bowl take a cup of curd + lemon juice + pepper crushed + salt and mix well.
  4. For salsa: mix tomato + onion + carrot + green chilli + chat masala+ Aamchur powder + salt and mix well..
  5. Final plating: Layer 1- Mexican rice, layer 2- Rajma masala, layer 3- sour cream, layer 4: salsa and top with nachos.
