Ingredients for Spinach Frittata:
- 4 eggs.
- 2 tbsp milk.
- 1/3 cup grated cheese.
- 1/4 teaspoon salt or less as per taste.
- 1/8 teaspoon freshly ground pepper.
- 2 tbsp olive oil.
- 1 medium onion, chopped.
- 1 large clove garlic, finely chopped.
- 1 large deseeded tomato (optional).
- 11/2 cup chopped Spinach.

- In a mixing bowl, whisk together eggs, milk, and cheese. Stir in the salt and pepper. Set aside..
- Heat olive oil in an non stick pan. proof, on medium heat. Add the onions and sauté until translucent, about 4-5 minutes. Add the garlic and tomatoes (if using) and cook a minute more..
- Add the chopped spinach, a handful at a time, mix with the onions. Do not overcook the the Spinach. Add salt and mix well..
- Add the egg mixture, spread the mixture out evenly on bottom of the pan. Spread the egg completely and add a little more cheese to top and mix a little..
- Simmer the flame on low and cook till done and then flip and turn and immediately serve hot..
