Ingredients for Kickin' Leftover Frittata:

  1. 2 medium roasted potatoes, sliced thin.
  2. 4 slice grilled aubergine (eggplant).
  3. 1 med spring onion, sliced.
  4. 3 slice streaky bacon, cut into 2 inch lengths.
  5. 1/2 roasted red capsicum, sliced into 1 inch strips then into 2-3 inch lengths.
  6. 1/2 roasted green capsicum, sliced the same as red capsicum.
  7. 2 carrots, cooked then sliced into 1 inch rounds.
  8. 6 eggs.
  9. 3 clove garlic, crushed and roughly chopped.
  10. 1 salt, to taste.
  11. 1 cracked black pepper to taste.
  12. 1/2 pinch chili powder, a little goes a long way with eggs.
  13. 1/2 cup grated cheese.

  1. Preheat oven to 180?.
  2. Combine eggs, garlic,salt, pepper and chili powder.
  3. Pour a small amount of egg mixture into a shallow casserole type dish just enough to cover the bottom. I used one measuring 10cm by 10cm, 6cm depth..
  4. Layer the potatoes, aubergine and spring onion..
  5. Add half of the chopped bacon.
  6. Layer the carrots and both capsicums.
  7. Spread the other half of the bacon on top..
  8. Pour over the rest of the egg mix. don't forget to give it a stir first otherwise all your pepper will be in one spot..
  9. Bake in oven for 25-30 minutes.
  10. Sprinkle over grated cheese and bake until golden. (10-15 mins).
  11. Remove from oven and let stand for 5-10 minutes..
  12. Cut and serve.
