Ingredients for Flavor Infused Chèvre Whipped Cream:

  1. 500 ml Heavy Whipping Cream.
  2. 20 grams Confection sugar.
  3. Herb, spice or whatever. For this I used mint. About four sprigs..
  4. 5 oz Chèvre.

Step by step how to cook Flavor Infused Chèvre Whipped Cream:

  1. In a small saucepan combine Heavy Whipping Cream, Chèvre, half your sugar and whatever flavor you are going with. I'm using mint here..
  2. Simmer for 15 - 20 minutes. Stirring occasionally. Do Not Boil. You'll have a mess, it's not necessary and it ruins your cream..
  3. Next prep your equipment for whipping. I put my bowl and paddles for my mixer in the freezer. I also prep for filtering out any solids..
  4. Once it's done simmering strain it through a mesh sieve or cheesecloth..
  5. Put cream into heat safe container, cover and refrigerate for two hours stirring at least once during the process..
  6. Once cooled combine cream and rest of sugar into cooled mixing bowl. Place mixing bowl into a larger bowl with a little ice water in it. I use a large pot. Whip until you reach desired consistency..
  7. Fun options include folding in coco powder. Or top it with balsamic reduction. Or do what I did with this and inject it into doughnuts. Also good on chocolate pudding or mousse..
  8. For a heavier more frosting like consistency add more chèvre and sugar..
