Ingredients for Iz's Summer Squash Enchiladas:
- 2 medium summer squash.
- 1 scallion.
- 1/2 red pepper.
- 1 tbsp vegetable oil.
- 8 corn tortillas.
- 8 oz cheddar cheese.
- 1 can green enchilada sauce.
Step by step how to cook Iz's Summer Squash Enchiladas:
- Preheat oven to 350°F.
- Chop summer squash, red pepper, and scallion small.
- Saute in 1 tbsp vegetable oil until scallion are clear and squash is softened.
- Set aside and warm tortilla in skillet.
- Put cheese and squash mixture down the center.
